ConcreteRiver provides some amazing flavor reviews, including notes and mixing suggestions, in his videos! This one is on a batch of some of our newest flavors – Popcorn, Graham Cracker, and Vanilla Bean. He is very thorough and explains his thoughts well. This video is short, sweet, and to-the-point, and therefore definitely worth listening in to the full thing to benefit from this great source of flavor information! Breakdown of ConcreteRiver’s “FLV Beta Testing 2: Popcorn, Graham Cracker, Vanilla Bean”

0:45 – New flavor FLV Popcorn – He notes that it’s an accurate popcorn taste. It’s not an aggressive flavor, more of a straight drier popcorn with a little sweetness, but not quite a kettle corn. There’s a slight butter note to it’s caramel note, but he warns that it taste like butyric acid at higher percentages, so stay lower. Texture is dry, but accurate. He notes that it might get lost in busier recipes if trying to use it as an accent.

Primary note percentage suggestion: 1.5 – 2 %.

6:20 – New flavor FLV Graham Cracker – ConcreteRiver notes as a top-heavy graham cracker with a lighter base. A drier, almost graham flour texture, without as much “crunch”. He notices more of a vanilla note than a cinnamon, so it would be a good sans-cinnamon top note. When mixing, it will need something with more body to help balance those higher notes.

Primary note percentage suggestion: 3 – 4%.
Accent note percentage suggestion: 2%.

11:54 – New flavor FLV Vanilla Bean – Initial description is “really interesting”. Threw him for a loop at first. This is more of a vanillin, a little spicer and complex, without that cream or heavier base. Just the vanilla top notes – very unique compared to any  other vanilla on the market. Use as a vanilla enhancer for creams and custard, especially with existing vanilla notes. When used in this way, it adds depth, nuance, and spice to more commercial, flat vanilla flavors (especially compared to straight vanillin). This flavor would also be great when you want a vanilla flavor but not the cream flavor/texture.

Accent note percentage suggestions: 0.25 – 0.75%
